A ‘Barista’ is someone who has been properly trained in the art of coffee making in the traditional Italian coffee house way. They are experts in coffee - from using proper espresso making machines, through to bean selection, grinding and knowing the correct temperatures and pressures needed to produce the perfect cup of coffee and all the variations that can be offered.

Caffè Ritazza steeps its Head Baristas in Italian coffee culture at its Barista School in Milan, where they are taught, and have to pass exams, in the true traditional Italian art of espresso making. They are then empowered with real coffee knowledge.

Caffè Ritazzas worldwide team of Head Baristas pass on their expertise to the teams in our espresso bars. Only trained baristas can make coffee at Caffè Ritazza and each outlet has a Senior Barista to oversee this traditional art. No-one can just get a job at Caffè Ritazza and start making coffee for customers.

It is the Barista who is in charge of all the details that go into the perfect coffee making process at Caffè Ritazza. They know to check and control the right portion, grind size and ‘tamp’ to apply to the coffee grounds, the time for extraction and correct and optimum use of the equipment. Different working temperatures and humidity can also alter the grind, so all our barista check and reset the equipment regularly throughout the day.

We are proud of our Baristas and their expertise in making coffee. We have now trained more than 5,000 baristas around the world, and for each and every one of them, this is more than just a job, it is a life-long passion in the traditional art of making coffee.
